Back on that chardonnay horse. After losing our fruit source we took a little sabbatical from the variety in 2015. Rather than just scramble we were determined to find the right grower whom we could work with long term. And Phil Chapman & the crew at Denton View Hill are unquestionably the right growers. Vines now hitting their straps at 12 years old, mean granitic soils that inhibit vigour & improve concentration, a great mix of clones & east-west rows on an eastern facing slope which means the fruit doesn’t get smashed by the harsh afternoon sun.
Winemaking was, as always, very simple. Pick early, whole bunch pressed, full malo & no adds other than low levels of sulphur. Beautifully balanced grapes have produced a beautifully balanced wine.

Site: Denton View Hill Vineyard, Tarrawarra (Yarra Valley), Victoria
Winemaking: Hand picked, pressed to barrel & then wild yeast fermented & matured in 10% new/90% used French oak barriques & hogsheads. Full MLF, no fining, racked, settled (but not filtered) & then into bottle. No additions other than sulphur dioxide.
