The second release of our very limited, top shelf sauvignon blanc. Yep, you read that right.
Produced for the most part from a single bin of fruit off the revered Willowlake Vineyard in Gladysdale, Deep, red volcanic soils always seem to imbue the variety with tremendous power, depth & complexity, whilst the altitude & latitude (300m above sea level in the cooler southern part of the valley) ensure that freshness & vitality are retained. Paired this time with two one year old barriques in which the wine was wild fermented & then matured, we feel that whilst all of our sauvignon blancs are about shifting perceptions, this one does it better than any……
Volume: 70 dozen
Site: Willowlake Vineyard, Gladysdale (Yarra Valley), Victoria
Winemaking: Hand picked, pressed to barrel & then wild yeast fermented & matured in two one year olf French oak barriques. Partial MLF, no fining, racked, settled (but not filtered) & then into bottle. No additions other than sulphur dioxide.
