Third time out for our whole bunch Sauvignon Blanc. Seems to work such a treat with the variety. Enough traditional flavours to not alienate the masses but also plenty there to intrigue & fascinate people more interested in the fringes. And that texture……the stems and skins naturally neutralising some of that rapier like acidity & creating a whole new level of weight & depth to the wine. And it’s bloody fun to drink too…….

Winemaking: Hand picked & then wild yeast fermented as whole-bunches in open fermenters. 50% pressed after 5 days, 50% after 7 days, both to old oak. Racked twice just prior to bottling. No idea(!) on MLF but definitely unfined & unfiltered.
